A tasty lesson in chocolate making

Twelve pupils from Catmose College have taken part in a chocolate masterclass.

The pupils were welcomed to New College Stamford in December, where they enjoyed the masterclass run by lecturer Phil Matthews at New College 

Caitlin Edens was one of the pupils who took 

She said: “We were welcomed to the college and quickly started with an introduction to perfecting chocolate – learning how to temper it so that the chocolate doesn’t melt at room temperature.

“We then went onto using moulds, and a few of us had a go ourselves, which proved to be a lot harder than it 

“After about an hour, we were each given a piece of cocoa butter transfer sheet, and used piping bags to make our own chocolate lollipops, using popping candy and edible pink balls to 

“Each of us took home a bag filled with chocolates that we’d made throughout the day.

“Overall the day was brilliant and exciting; we all learnt many new skills that we hope to use in our food coursework in the
